Healthy Spinach, Mushroom & Ham Omelet

Breakfast is a great way to get in some veggies.  There are a variety of things that can be added to eggs and I wanted to share one idea how you can do it.

½ c mushrooms cleaned/rinsed
2 c organic spinach
3 egg whites
2 full eggs
2 slices ham off the bone
couple sprays olive oil
¼ c water
2-3 pinches shredded Parmesan
1 tsp Powdered garlic
Sea salt & pepper to taste
Ground red pepper (optional)

Add a couple sprays of olive oil to skillet on medium heat. Add mushrooms with a small amount of salt and pepper (use this lightly as there will be more salt added to the spinach). Sauté about 3-5 minutes.

Add spinach to the mushrooms (if skillet dry add 1 tsp at a time of water). Sprinkle a little more salt (and pepper if desired) on top of spinach and cover.

While this wilts, put eggs in a bowl with ¼ c water and lightly mix but do not overbeat (this can make the eggs tough).
Mix spinach and mushrooms together then put the eggs on top of veggies.
Tear or chop ham and spread evenly on eggs and cover again. Let this cook until done then sprinkle Parmesan cheese evenly.

Cut eggs in half and fold each half over. I usually turn off the skillet and cover for another minute or so to allow cheese to melt. Then serve.
255 calories per serving. Serves 2

Pictured is 1 slice, half eaten, piece of Oat Bran toast for 60 calories with 1 tsp butter for another 50 calories.

With toast and butter: 365 calories
